IrishMalts.com was set up by two brothers from Cork, Ireland with a passion for Whiskey and an aspiration to join the Irish Spirits revolution. DUKE OF YORK – The thing about the history of the Duke is that nobody can agree on what’s true, and we are not here to help. The only way to know what it’s like is to come and experience it yourself. Today it’s known for the history of Belfast distilling which is visible on bric-a-brac inside, the murals, the Belfast phrases covering the place. For 30 years Willie saved up precious Belfast ephemera from pubs across the nine counties of Ulster, and continues to do so. Everything on display is original and true Belfast, it’s got provenance. Added to that are the new murals from guest artists which cover most of the walls outside.

IRISH WHISKEY EXPERIENCE – The Irish Whiskey Experience has been developed by whiskey lovers as a first class destination for whiskey enthusiasts and novices alike. It is a sensory and interactive experience that guides visitors through the history of Irish Whiskey, the distilling process and a comparative tasting of delicious Irish whiskeys. There are numerous masterclasses to choose from, to suit all occasions and palates.

DINGLE DISTILLERY – The Dingle Whiskey Distillery was crafted and conceived by three independent spirits: Oliver Hughes; Liam LaHart and Peter Mosley. Oliver, Liam and Peter are the people behind Porterhouse Brewing Company; one of the pioneers of craft brewing in Ireland in 1996. Craft beer in Ireland in the mid-1990s was not appealing to the masses. The idea was radical to some, simply mad to the rest. The refined pallets of the then youthful Oliver, Liam and Peter had seen a love for beer. As their palates became more and more experienced to the taste of Earth’s natural ingredients, the attention turned to whiskey.

DRUMSHANBO – Here at the edge of a lake in a shed in a small Irish town, the ordinary is made extraordinary. Within is the laboratory of PJ Rigney, boundary-pushing begetter of hand-made spirits who slow distills gin with natures finest oriental botanicals and gunpowder tea.

REBEL CITY DISTILLERY – From 1917 to 1987, the factory of Henry Ford & Sons was the industrial hub of Cork City, manufacturing motor vehicles on the banks of the River Lee as one of Cork’s largest employers. An important cultural landmark that has lain dormant and deteriorirating for decades, Rebel City Distillery has chosen this historic space for its home, drawing on the innovations of the past to inspire the creations of the future. Robert Barrett is a biochemist turned fine spirits expert with more than a decade of experience in the art of crafting and distilling premium spirits. Robert holds an MSc in Brewing & Distilling from the Heriot-Watt University in Edinburgh, which counts many stalwarts of the craft drinks industry among its alumni.

BLACKS BREWERY – Our mission is to escape the mundane of the mass market by producing beers with passion, personality and lots of hops! We have a seven strong core range, but are constantly creating new recipes and quirky flavour combinations, releasing anywhere from 6 to 10 experimental beers a year. In 2015 we expanded and added our state-of-the-art Distillery, where we produce a range of boutique spirits including Gin, Rum and Whiskey. This crossover between Brewery and Distillery is unique and gives us the option to age our beers in spirit barrels and vice versa to improve the depth of flavour. Our first bottle of Blacks Irish Gin hit shelves in 2015, and we made history in 2018 with the production of Blacks Spiced Rum, Ireland’s first-ever rum, made entirely from start to finish in Ireland.

BLACKWATER DISTILLERY – WE ARE A MICRO-DISTILLERY BASED IN WEST WATERFORD ON THE BANKS OF THE BLACKWATER RIVER – We like to keep it real, which is why early in the morning we switch on the lights, open the post and fire up the still. In our 1950s coverted hardware store in Ballyduff, we make award-winning gin and small batch Irish whisky.

MOLLOYS – The origins of the Molloy Group go back to 1933, when Martin Molloy purchased ­The Foxes Covert Licenced & Grocery business in Tal­laght Village. THE MOLLOY GROUP TODAY – We have a dedicated team of staff across our liquor stores and pubs who work each day to provide our customers with excellent product choice and exceptional customer service. We prioritise staff training and development, to provide our staff with knowledge and skills they require to provide first class customer service across our business. Our greatest asset is 100 (circa) employees we have working throughout the company.­

POWERSCOURT DISTILLERY – Three custom-designed copper pot stills form the Distillery centrepiece. Uniquely shaped by skilled craftsmen, these copper stills are made in much the same way as they were in the 1800’s when the Mill House was in daily use. Powerscourt Distillery has been custom designed and commissioned by Forsyths, a 5th-generation family owned business from Scotland who have been manufacturing distillery equipment since the 1890’s.

MARTINS OFF LICENCE – Opened by Tom Martin over forty years ago, the business is very much a family affair. Tom’s sons Declan and Damian now run the show from the same shop where it all started, opposite Fairview Park a stone’s throw from Dublin city centre. With decades of expert knowledge between them, the Martin’s team can help you find exactly what you’re looking for. Their shelves are stacked with specialist wines, beers and spirits from the best of local and international producers. And if it’s not in store (unlikely), they know exactly where to source it for you.

WHISKEY ISLAND – The Whiskey Island management team comprises of John P. & John F. Callely. A father and son duo, both Johns have a wealth of experience between them, especially in the whiskey tourism domain. John Senior worked for Pernod Ricard for 30 years, overseeing the successful development of both Jameson visitor centres in Dublin and Cork, both of which feature on our tours. He also oversaw the successful growth of Bushmills Distillery in Northern Ireland (a stop on our Northern Ireland tour). In recent years, John has been helping some of these new distilleries to get their visitor centres up and running and get them successfully on the tourism map.

CONNACHT DISTILLERY – The Connacht Distillery is a totally self-contained 2500m2 facility. We prepare our mash, ferment, distill, age, and bottle our spirits all on site. The air in our distillery enjoys the heavenly scent of evaporating fine Irish whiskey known as “the angels’ share.” The heady odor of whiskey is a far cry from the yeasty tang the building used to enjoy when it housed the Duffy family bakery. The building surely has moved from one classic use of fine Irish grains to another. The distillery houses our three copper pot stills, which were custom designed by our master distiller, Robert Cassell, for the sole purpose of making great whiskey. We had our stills made to these specifications in Victoria, British Columbia, Canada by the very experienced Specific Mechanical Systems. The dimensions of our stills, particularly their necks and heads, are different than others being used in Ireland, ensuring that our whiskey also will be unique and special.
